Tropical Summer Fruits Salad

A taste of sunshine.

The fridge has been emptied of all Dudley's favourite things - fizzy drinks and cakes, chocolate bars and burgers - and filled instead with fruit and vegetables and the sorts of things that Uncle Vernon called "rabbit food".

When people mention salads, many of them might just loosely label them as "rabbit food". In this post, we will give you a recipe that is flavourful and oh-so-easy!



1/2 ripe mango

1/2 ripe pineapple

1/2 ripe papaya

2 kiwi fruits (you can use both the green ones or the golden ones.)

For the dressing:

1/2 lime juice

8 leaves. fresh mint

2 teaspoon of coconut sugar

  1. Cut the flesh of the mango off the stone and chop it into cubes. Place them in a bowl.
  2. Cut the skin of the pineapple and remove its core. Chop it into chunks. Place them in together with the mango.
  3. Cut the papaya into half. Remove the seeds with a spoon. Repeat steps in the same way as the mango. Place them in the same bowl.
  4. Remove the skin of the kiwi with a sharp knife. Slice the kiwi into rounds and place them into the same bowl.
  5. Drizzle the lime juice over the chopped fruits.
  6. Pound the mint leaves with the sugar.
  7. Sprinkle the prepared mint sugar over the fruits.
  8. Toss them gently and serve.
