High Protein Quinoa Porridge

A replacement for rice, but still as warming!

Quinoa is a real versatile ingredient you can make in a huge batch, kept in the fridge, and have it with savoury or sweet dishes.

I decided to make a quick quinoa porridge one day when I woke up several times from a whooping cough that wasn't going away. Quinoa is a seed that gives us high energy and supports our respiratory system. It was exceptionally warming to have this bowl first thing in the morning with fresh fruits and spices.

Quinoa porridge

1 cup nut milk/ coconut milk

3/4 cup cooked quinoa

1 tsp cinnamon

pinch of nutmeg

1 tsp pure vanilla extract

2 tsps coconut sugar (you can alternatively drizzle honey/maple syrup over quinoa)

2 tsps coconut butter

Add nut milk to a pot and place it on top of a stove.

Warm nut milk over low to medium heat. Do not boil.

Add quinoa and stir in remaining ingredients.

Let simmer for 3-5 minutes.

Serve with fresh fruits, nut butter and favourite healthy sweetener!

So great to get this protein booster right in the morning, especially in cold, rainy days...
